  • 1 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons salted butter (for caramel)
  • ⅛ teaspoon salt
  • ½ cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup heavy whipping cream (divided)
  • 1 ¼ cups milk or dark chocolate

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, cream together the salted butter, powdered sugar, and vanilla extract. Gradually add the flour until combined. Press this mixture evenly into the prepared baking pan and bake for about 20 minutes until lightly golden.
  3. For the caramel layer, combine salted butter, salt, corn syrup, and granulated sugar in a saucepan over medium heat. Stir until melted and then slowly add in heavy whipping cream while stirring continuously until thickened (about 8-10 minutes). Remove from heat and stir in vanilla extract before pouring over the baked shortbread.
  4. Melt the chocolate in a saucepan or microwave-safe bowl. Once melted, mix in heavy whipping cream until smooth. Pour this chocolate mixture over the cooled caramel layer.
  5. Refrigerate for at least 4 hours until set. Cut into squares and enjoy!
