Ingredients
- 2 cans (5oz each) tuna, drained
- 1 medium onion, chopped
- ½ stalk celery, chopped
- 1 clove garlic, minced
- 1 tablespoon parsley, chopped
- 3–4 tablespoons mayonnaise
- 3 tablespoons extra virgin olive oil
- ⅓ cup mozzarella cheese, shredded
- Sliced bread (your choice)
- Softened butter
- Salt and pepper to taste
Instructions
- In a medium bowl, combine the drained tuna with chopped onion, celery, parsley, minced garlic, mayonnaise, olive oil, and mozzarella cheese. Mix well and season with salt and pepper to taste.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Butter one side of a slice of bread and place it in the skillet (buttered side down). Add about 2 tablespoons of the tuna mixture on top.
- Butter another slice of bread on one side and place it buttered side up on the tuna mixture.
- Cook until the bottom slice is golden brown; then carefully flip the sandwich using a spatula. Grill until both sides are crispy and golden.
