  • 2 cans (5oz each) tuna, drained
  • 1 medium onion, chopped
  • ½ stalk celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil
  • ⅓ cup mozzarella cheese, shredded
  • Sliced bread (your choice)
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine the drained tuna with chopped onion, celery, parsley, minced garlic, mayonnaise, olive oil, and mozzarella cheese. Mix well and season with salt and pepper to taste.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  3. Butter one side of a slice of bread and place it in the skillet (buttered side down). Add about 2 tablespoons of the tuna mixture on top.
  4. Butter another slice of bread on one side and place it buttered side up on the tuna mixture.
  5. Cook until the bottom slice is golden brown; then carefully flip the sandwich using a spatula. Grill until both sides are crispy and golden.
