  • 1 3/4 cups granulated sugar
  • 3/4 cup cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup canola oil (or melted coconut oil)
  • 2/3 cup unsweetened applesauce
  • 1 tablespoon pure vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine soy milk and apple cider vinegar; let sit for 5 minutes.
  3. Add canola oil, applesauce, and vanilla extract; mix well.
  4. Sift in flour, sugar, cocoa powder, baking powder, baking soda, and salt; stir until combined.
  5. Gradually add boiling water until the batter is smooth.
  6. Pour into the prepared pan and bake for about 35 minutes or until a toothpick comes out clean.
  7. Cool for 10 minutes in the pan before transferring to a wire rack.
