  • ½ cup cucumber, peeled and chopped
  • ½ cup sliced green onions
  • ½ cup red bell pepper (or hot red pepper for spice)
  • ⅓ cup natural peanut butter
  • 3 tablespoons olive oil
  • 3 tablespoons rice vinegar
  • Optional: 12 ounces diced cooked chicken

Instructions

  1. In a large mixing bowl, combine the shredded cabbage, cucumber, green onions, red bell pepper, and peanuts. If using chicken, add it at this stage.
  2. In a small bowl, whisk together the peanut butter, olive oil, rice vinegar, coconut aminos, sugar substitute, minced garlic, ginger paste, red pepper flakes, salt, and pepper until smooth.
