Description

Ingredients

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 cups shredded purple cabbage
  • 2 cups grated carrots
  • 4 scallions
  • 1 cup edamame
  • Peanut sauce (to taste)
  • Chopped cilantro (for garnish)
  • Crushed peanuts (optional)

Instructions

  1. Cook the noodles in salted boiling water until al dente. Drain and rinse under cold water.
  2. Slice the bell peppers, shred the cabbage using a mandoline, and grate the carrots.
  3. In a large bowl, combine the rinsed noodles with all prepared vegetables.
  4. Drizzle half of the peanut sauce over the mixture and toss until evenly coated. Add more sauce as desired.
  5. Garnish with cilantro, scallions, and crushed peanuts before serving.
