Instructions
- Cook the noodles in salted boiling water until al dente. Drain and rinse under cold water.
- Slice the bell peppers, shred the cabbage using a mandoline, and grate the carrots.
- In a large bowl, combine the rinsed noodles with all prepared vegetables.
- Drizzle half of the peanut sauce over the mixture and toss until evenly coated. Add more sauce as desired.
