  • 1 cup cocoa powder
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups mashed sweet potato (from 34 large sweet potatoes)
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9 or 10-inch cake pan.
  2. In a food processor, combine coconut flour, cocoa powder, sugar, baking powder, salt, mashed sweet potato, eggs, maple syrup, coconut oil, and vanilla extract. Pulse until smooth.
  3. Pour the batter into the prepared cake pan and bake for 45–50 minutes or until a skewer inserted in the center comes out clean.
  4. Allow the cake to cool completely before frosting it with your favorite chocolate frosting.
