- ½ cup granulated sugar
- 1 cup brown sugar (tightly packed)
- 2 eggs
- 3 ⅔ cups gluten-free or all-purpose flour
- 1 tsp baking soda
- 1 tsp vanilla extract
- ⅓ cup finely diced strawberries
- Pinch sea salt (optional)
Instructions
- In a stand mixer, beat softened cream cheese and powdered sugar until smooth. Scoop teaspoon-sized balls and freeze.
- In a clean mixer bowl, combine cold butter, granulated sugar, and brown sugar. Beat until creamy.
- Add eggs and mix well. Gradually incorporate flour, baking soda, and salt until fully combined.
- Fold in diced strawberries and chill dough for 30 minutes.
- Preheat oven to 350°F (175°C). Scoop cookie dough onto lined pans; press an indent in the center of each ball and place a cream cheese ball inside.
- Seal dough around filling, space out on the pan, and bake for 11-12 minutes until set but soft.
- Cool on the pan for 10 minutes before transferring to a wire rack.
