  • 1.5 cups green split peas
  • 8 cups reduced-sodium chicken broth
  • 1 meaty ham bone

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, celery, salt, and pepper until softened (about 5-8 minutes). Add garlic and spices; cook for another minute.
  2. Stir in rinsed split peas, ham bone, and chicken broth. Bring to a boil, then reduce heat to low and simmer uncovered for 60-90 minutes until peas are tender.
  3. Remove the ham bone and shred any meat back into the soup. Blend part of the soup if desired for creaminess.
  4. Serve hot with fresh thyme leaves and crusty bread.
