  • 1 tablespoon olive oil
  • 8 oz sliced mushrooms
  • 3 cloves minced garlic
  • 4 cups baby spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper (to taste)
  • Red pepper flakes (optional)
  • Fresh parsley (optional)

Instructions

  1. Cook orzo according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté for 5–7 minutes until browned.
  3. Stir in minced garlic for 1–2 minutes until fragrant.
  4. Add baby spinach and cook for 2–3 minutes until wilted.
  5. Toss cooked orzo into the skillet, mixing well with mushrooms and spinach.
  6. Remove from heat and sprinkle with Parmesan cheese; season with salt and pepper to taste.
  7. Garnish with red pepper flakes and chopped parsley if desired. Serve warm.
