  • 12 full-size graham crackers
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter (melted)
  • ½ cup vegetable oil (such as grapeseed)
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup bittersweet chocolate chips
  • 2 heaping cups mini marshmallows (about 3.5 ounces)

Instructions

  1. Preheat the oven to 350°F and prepare an 8×8 inch baking pan with parchment paper.
  2. Make the graham cracker crust by blending graham crackers and sugar, then mixing with melted butter. Press into the bottom of the prepared pan.
  3. Bake the crust for 15–20 minutes until golden brown.
  4. In a bowl, whisk together vegetable oil, sugar, eggs, and vanilla. Add cocoa powder, flour, salt, and baking powder; mix until smooth.
  5. Fold in chocolate chips and pour over the cooled crust. Bake for 30–40 minutes until set.
  6. Broil mini marshmallows on top for about 2 minutes until golden.
  7. Let cool before slicing.
