  • Fresh tarragon (chopped)
  • Crème fraîche (optional)

Instructions

  1. Melt butter in a large Dutch oven over medium heat. Add diced onion and minced celery; sauté until softened (about 5 minutes).
  2. Stir in minced garlic and cook for 1 minute.
  3. Sprinkle flour over the vegetable mixture; cook for 2 minutes while stirring constantly.
  4. Gradually whisk in warmed seafood stock and milk, ensuring no lumps form.
  5. Mix in tomato paste, bay leaves, and Old Bay seasoning; simmer for 5 minutes.
  6. Incorporate heavy cream and simmer for an additional 5 minutes until thickened slightly.
  7. Add shrimp and cook until pink (3–4 minutes); gently fold in crab meat and sherry.
  8. Remove bay leaves, adjust seasonings with salt and white pepper to taste. Serve hot with fresh herbs on top.
