  • 3 tbsp salted butter
  • 12 tbsp apple cider
  • 1/3 cup light brown sugar, packed
  • 1 and 1/4 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/8 tsp allspice
  • 12 tsp lemon juice (to taste)
  • 2 tsp cornstarch
  • 2 tsp water
  • 3 cups cinnamon graham cracker crumbs
  • 1/2 cup + 3 tbsp salted butter, melted
  • 32 ounces cream cheese, at room temperature
  • 1 and 1/2 cups granulated sugar
  • 4 large eggs, at room temperature
  • 1 cup full-fat sour cream, at room temperature
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1/4 cup all-purpose flour
  • 1/2 cup old-fashioned whole rolled oats
  • 1/4 cup brown sugar, packed
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 1/4 cup cold salted butter, cubed
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp salted butter, cubed (for caramel)
  • 1/2 cup + 1 tbsp heavy cream
  • pinch of flaky sea salt

Instructions

  1. Preheat oven to 350°F. Prepare a springform pan by spraying it with nonstick spray.
  2. For the apple filling, cook sliced apples with butter, sugar, and spices until tender. Set aside.
  3. Mix graham cracker crumbs and melted butter to form the crust, press into the bottom of the prepared pan, and bake for 10 minutes.
  4. Beat cream cheese and sugar until smooth; add eggs one at a time followed by sour cream and spices. Pour over the crust.
  5. Place in a water bath and bake for about 90 minutes until edges are set but center is slightly wobbly.
  6. Cool in the oven then refrigerate for at least six hours before serving with apple topping, crumble, and salted caramel sauce.
