  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth
  • 2 tablespoons butter (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, combine olive oil, minced garlic, thyme, rosemary, orange zest, honey, soy sauce, Dijon mustard, salt, and pepper.
  3. Rub the marinade over the whole chicken thoroughly; allow it to marinate for at least 15 minutes or overnight in the fridge.
  4. Stuff the cavity of the chicken with quartered onions and pour chicken broth into the roasting pan.
  5. Roast for 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C), basting occasionally.
