- 1/3 cup protein powder
- 2 tbsp cocoa powder
- 1/3 cup melted coconut oil (or butter)
- 2 eggs
- 2/3 cup sugar (or erythritol)
- Optional: 1/2 cup mini chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8-inch baking pan by greasing it or lining it with parchment paper.
- In a mixing bowl, combine dry ingredients: almond flour, protein powder, cocoa powder, baking powder, and salt until mixed well.
- In another bowl, whisk together wet ingredients: melted coconut oil, eggs, sugar (or erythritol), and vanilla extract until smooth.
- Gradually combine the wet mixture into the dry ingredients and stir until fully blended. Fold in mini chocolate chips if using.
- Spread the batter evenly in the prepared pan and bake for about 20 minutes or until a toothpick inserted comes out mostly clean.
- Allow brownies to cool in the pan before slicing into squares.
