  • 1 small yellow onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 46 garlic cloves
  • 28 oz crushed tomatoes
  • 14.5 oz fire roasted diced tomatoes
  • 3/4 cup uncooked long grain white rice
  • 6 cups low sodium beef broth

Instructions

  1. In a large pot over medium-high heat, brown the hot Italian sausage with chopped onions for about four minutes.
  2. Add chopped red and green bell peppers, minced garlic, and red pepper flakes; sauté for an additional two to three minutes.
  3. Stir in crushed tomatoes, fire roasted diced tomatoes, uncooked rice, herbs, thyme, salt, pepper, and beef broth.
  4. Bring to a boil, then reduce heat and simmer covered for 8-12 minutes until rice is cooked.
