  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup grape or strawberry jelly

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a mixing bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
  3. Add the egg and vanilla extract; mix until combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet mixture until just combined.
  5. Scoop about two tablespoons of dough, flatten it into discs, and place half on the prepared sheet.
  6. Add about one teaspoon of jelly in the center of each disc.
  7. Top with another dough disc and seal the edges by pressing down.
  8. Bake for 12-15 minutes until golden around the edges.
  9. Let cool on the baking sheet for five minutes before transferring to a wire rack.
