Ingredients

  • 4 skinless boneless chicken thighs
  • 200g fresh pineapple chunks
  • 1 small shallot
  • Juice of 1 lime
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 1 1/2 tsp tomato puree
  • 1 tsp salt
  • 2 large garlic cloves
  • Small handful fresh coriander, roughly chopped
  • 1 ripe avocado, cubed
  • 8 small corn or flour tortillas

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a medium bowl, whisk together lime juice, chipotle paste, honey, tomato puree, salt, and crushed garlic.
  3. Chop the chicken into bite-sized pieces and toss in the marinade. Let it sit while you prepare the baking tray.
  4. Spread the marinated chicken on a baking tray and scatter pineapple chunks over the top.
  5. Roast in the oven for about 30 minutes until cooked through.
  6. While roasting, chop shallots and avocado. Prepare tortillas by lightly charring if desired.
  7. Serve tacos with chicken and pineapple mixture topped with shallots and avocado.
