  • 2 cups Heavy Cream
  • 1/2 cup Unsalted Butter
  • 6 cups Sugar (divided)
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Baking Soda
  • 1 1/2 cups Walnuts or Pecans (chopped)

Instructions

  1. Lightly grease a 9×13-inch baking dish and set aside.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat for about 20 minutes while stirring frequently until liquefied.
  3. In a large saucepan, combine the remaining 4 cups of sugar with heavy cream and simmer on low heat until well mixed.
  4. Pour the melted sugar into the cream mixture while stirring continuously.
  5. Increase heat to medium and cook until the mixture reaches 244°F (softball stage).
  6. Remove from heat; stir in baking soda until well blended.
  7. Mix in unsalted butter and vanilla extract until smooth.
  8. Let rest for about 20 minutes before adding chopped nuts.
  9. Pour mixture into the prepared dish and cool for at least 1-2 hours or overnight before slicing into squares.
