  • 4 oz cream cheese (softened)
  • 2 Tbsp powdered sugar
  • 1/3 cup pumpkin puree
  • 2 cups graham cracker crumbs
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 2 cups white chocolate chips

Instructions

  1. In a mixing bowl, beat together cream cheese and powdered sugar until smooth.
  2. Stir in pumpkin puree, 1 cup of graham cracker crumbs, pumpkin pie spice, and cinnamon until well combined. Add remaining graham cracker crumbs.
  3. Chill the dough for at least 30 minutes.
  4. Line a baking sheet with parchment paper. Scoop out tablespoon-sized portions of the dough, roll into balls, and place on the sheet.
  5. Refrigerate for another 30 minutes while melting white chocolate in a microwave-safe bowl until smooth.
  6. Dip each ball into melted chocolate, tapping off excess before placing back on parchment.
  7. Drizzle any remaining chocolate over the balls and optionally sprinkle with extra graham cracker crumbs.
