- 1/3 cup lemon juice
- 1 cup 2% milk
- 3.4 oz box instant lemon pudding
- 21 oz can blueberry pie filling
- 16 oz tub frozen whipped topping, thawed
Instructions
- Make the crust by combining graham cracker crumbs with melted butter. Reserve some for topping later. Press the mixture into a 13 x 9 inch baking dish and refrigerate.
- In a large bowl, beat room temperature cream cheese and sugar until fluffy. Gradually add lemon juice and milk, mixing well. Stir in dry lemon pudding until fully combined.
- Spread the lemon mixture over the chilled crust evenly. Spoon blueberry pie filling on top and spread gently.
- Top with thawed whipped topping and sprinkle reserved graham cracker crumbs if desired.
- Cover with plastic wrap and chill in the refrigerator for at least two hours before serving.
