  • 2 packages (8 oz each) cream cheese, room temperature
  • 1 cup granulated sugar
  • 1/3 cup lemon juice
  • 1 cup 2% milk
  • 3.4 oz box instant lemon pudding
  • 21 oz can blueberry pie filling
  • 16 oz tub frozen whipped topping, thawed

Instructions

  1. Make the crust by combining graham cracker crumbs with melted butter. Reserve some for topping later. Press the mixture into a 13 x 9 inch baking dish and refrigerate.
  2. In a large bowl, beat room temperature cream cheese and sugar until fluffy. Gradually add lemon juice and milk, mixing well. Stir in dry lemon pudding until fully combined.
  3. Spread the lemon mixture over the chilled crust evenly. Spoon blueberry pie filling on top and spread gently.
  4. Top with thawed whipped topping and sprinkle reserved graham cracker crumbs if desired.
  5. Cover with plastic wrap and chill in the refrigerator for at least two hours before serving.
