Ingredients

  • 85 grams jelly crystals
  • 125 mls cream
  • 200 mls thickened cream
  • 12 pieces Tiramisu sponge fingers
  • 1/2 cup port, sherry or juice
  • 1 1/2 cups custard
  • 400 grams mixed berries

Instructions

  1. Prepare the jelly according to package instructions and refrigerate until set.
  2. Fill small dessert dishes with 1 1/4 cups of the jelly mixture and chill.
  3. Whip cream into the remaining jelly until combined; pour over set jelly layers.
  4. Soak sponge fingers in port or juice and layer on top of jelly.
  5. Add custard and then chopped berries; reserve some for decoration.
  6. Whip thickened cream with custard powder until stiff; pipe onto trifles.
  7. Garnish each trifle with a berry and mint leaves.
