  • 4 salmon fillets (skin-on or skinless)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a large skillet over medium heat and add olive oil and butter until melted.
  2. Season the salmon fillets with salt and pepper, then place skin-side down in the skillet. Cook for about 4–5 minutes until golden brown before flipping.
  3. Once flipped, add minced garlic and sauté for 30 seconds. Stir in sun-dried tomatoes, heavy cream, chicken broth, thyme, and basil. Simmer for 3–4 minutes until slightly thickened.
  4. Sprinkle Parmesan cheese over the fillets, cover, and simmer for another 2–3 minutes until the cheese melts.
  5. Remove from heat, garnish with fresh parsley, and serve warm.
