  • 1 lb ground beef (or pork)
  • ½ cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp gochujang
  • ½ cup mayonnaise
  • 1 tbsp lime juice

Instructions

  1. Preheat your oven to 400°F (200°C). In a mixing bowl, combine ground beef, panko breadcrumbs, egg, minced garlic, grated ginger, soy sauce, gochujang, salt, and pepper. Mix until just combined.
  2. Shape the mixture into meatballs about 1 inch in diameter.
  3. Place meatballs on a baking sheet and bake for 18–20 minutes or until cooked through.
  4. Meanwhile, prepare the glaze by combining soy sauce, honey, gochujang, rice vinegar, sesame oil, garlic, and ginger in a saucepan over medium heat. Simmer until combined and slightly thickened.
  5. Toss the cooked meatballs in the glaze until fully coated.
  6. For the spicy mayo dip, whisk together mayonnaise, gochujang, lime juice, honey, and garlic powder in a small bowl until smooth.
