Ingredients
- 2 servings dry instant ramen noodle cakes (or other noodles)
- 10 oz extra firm tofu or vegetables/mushrooms (sliced)
- 1 cup water or vegetable broth
- 5–7 tbsp soy sauce
- 2–3 tbsp corn starch
- 1–3 tbsp sugar or other sweetener
- 2 tbsp rice vinegar
- 1/4 tsp ground pepper
- 1/2 tbsp chili garlic sauce
- 1 tbsp sesame oil
Instructions
- Prepare the sauce by mixing all sauce ingredients in a bowl until well combined; set aside.
- Boil water in a pot and add the ramen noodles. Cook them for about 2–3 minutes less than package instructions.
- Drain the noodles and set aside.
- Heat a pan over medium-high heat and sauté your chosen veggies or tofu until cooked through.
- Pour the prepared sauce into the pan with sautéed ingredients and let it simmer for 2–3 minutes.
- Add the drained noodles to the pan, mixing to coat evenly in the sauce.
- Continue cooking while stirring until noodles absorb some of the sauce, about 3 more minutes.
- Taste and adjust seasoning if needed before serving.
