- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 12 small flour tortillas
- 4 tbsp unsalted butter
- 2 cups chicken broth
- 1 cup sour cream
- Diced green chilies
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, melt butter and sauté diced onions until translucent, then add garlic.
- Combine chicken with onion mixture and spices in a mixing bowl.
- In the same skillet, make the sauce by whisking flour into melted butter, adding broth gradually until thickened, then stir in sour cream and green chilies.
- Spread some sauce in a baking dish, fill tortillas with chicken mixture, roll them up, and place seam-side down.
- Pour remaining sauce over enchiladas and top with cheese.
