Creamy White Chicken Enchiladas are the ultimate comfort food, perfect for family gatherings or a cozy weeknight dinner. This recipe features tender shredded chicken enveloped in soft tortillas, all smothered in a rich, creamy sauce made from sour cream and melted cheese.

  • 3 cups cooked, shredded chicken
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 12 small flour tortillas
  • 4 tbsp unsalted butter
  • 2 cups chicken broth
  • 1 cup sour cream
  • Diced green chilies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, melt butter and sauté diced onions until translucent, then add garlic.
  3. Combine chicken with onion mixture and spices in a mixing bowl.
  4. In the same skillet, make the sauce by whisking flour into melted butter, adding broth gradually until thickened, then stir in sour cream and green chilies.
  5. Spread some sauce in a baking dish, fill tortillas with chicken mixture, roll them up, and place seam-side down.
  6. Pour remaining sauce over enchiladas and top with cheese.
  7. Bake for about 25 minutes until bubbly and golden.
