  • Coriander seeds

  • Crushed tomatoes
  • Ginger
  • Turmeric
  • Sea salt
  • Dried brown lentils
  • Cayenne powder (optional)
  • Water
  • Coconut milk
  • Cherry tomatoes
  • Chopped cilantro

Instructions

  1. In a large skillet, heat coconut oil over medium-high heat. Toast cumin and coriander seeds for about 45 seconds, then add chopped garlic and brown for 2 minutes.
  2. Stir in crushed tomatoes, ginger, turmeric, and sea salt; cook for 5 minutes while stirring occasionally.
  3. Add dried lentils and cayenne powder (if using), then pour in water. Bring to a boil, reduce heat to low, cover, and simmer for 35–40 minutes until lentils are soft.
  4. Once cooked, stir in coconut milk and cherry tomatoes; simmer briefly before removing from heat. Finish with fresh cilantro.
