  • 1 pound salmon fillets (or your preferred fish)
  • ⅓ cup olive oil
  • 1 red bell pepper (sliced)
  • 1 serrano pepper (sliced)
  • 2 carrots (sliced)
  • 1 russet potato (optional, sliced)
  • 6 garlic cloves (halved)
  • 1 tablespoon tomato paste
  • Spices: paprika, cumin, turmeric, salt
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Sauté the sliced vegetables for 2–3 minutes.
  2. Stir in the spices and tomato paste; cook for another 2–3 minutes.
  3. Add half of the cilantro and about ¾ cup water. Cover and cook for 12–15 minutes until vegetables are tender.
  4. Season the fish fillets with salt and nestle them into the sauce. Spoon sauce over fish and add more water if needed.
  5. Cook on low flame for 20–25 minutes, basting the fish halfway through cooking.
  6. Garnish with fresh lemon juice and remaining cilantro before serving.
