  • 3 overripe bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup almond or oat milk
  • 1 1/2 cups all-purpose flour (gluten-free optional)
  • 1 cup rolled oats
  • 2 tbsp cinnamon (for swirl)
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 4 tbsp melted vegan butter (for swirl)
  • 1/3 cup light brown sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a loaf pan and set aside.
  3. In a mixing bowl, combine mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until smooth.
  4. In another bowl, mix baking powder, baking soda, flour, oats, cinnamon, and salt.
  5. Gradually add dry ingredients to wet ingredients; mix until just combined.
  6. Prepare cinnamon swirl by mixing melted butter, brown sugar, and cinnamon in a small bowl.
  7. Layer half of the batter in the prepared pan; drizzle half of the swirl mixture on top. Repeat with remaining batter and swirl.
  8. Use a knife to create a marbled effect by swirling through the batter gently.
  9. Bake for about 45 minutes or until a toothpick comes out clean.
  10. Cool before slicing; optionally top with cream cheese frosting.
