- 3 overripe bananas
- 4 tbsp melted vegan butter
- 3/4 cup maple syrup
- 1 cup almond or oat milk
- 1 1/2 cups all-purpose flour (gluten-free optional)
- 1 cup rolled oats
- 2 tbsp cinnamon (for swirl)
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 4 tbsp melted vegan butter (for swirl)
- 1/3 cup light brown sugar
Instructions
- Preheat oven to 350°F (175°C).
- Grease a loaf pan and set aside.
- In a mixing bowl, combine mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until smooth.
- In another bowl, mix baking powder, baking soda, flour, oats, cinnamon, and salt.
- Gradually add dry ingredients to wet ingredients; mix until just combined.
- Prepare cinnamon swirl by mixing melted butter, brown sugar, and cinnamon in a small bowl.
- Layer half of the batter in the prepared pan; drizzle half of the swirl mixture on top. Repeat with remaining batter and swirl.
- Use a knife to create a marbled effect by swirling through the batter gently.
- Bake for about 45 minutes or until a toothpick comes out clean.
- Cool before slicing; optionally top with cream cheese frosting.
