  • Pinch cream of tartar
  • 3 tablespoons plus 1 teaspoon granulated sugar
  • 2 egg yolks
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C) and prepare ramekins with cooking spray.
  2. In a bowl, whisk together powdered sugar, cocoa powder, and flour.
  3. Mix low-fat milk and water separately; combine with dry ingredients until smooth.
  4. Beat egg whites with cream of tartar until soft peaks form. Gradually add granulated sugar until stiff peaks form.
  5. Gently fold one-third of the egg whites into the chocolate mixture, then fold in remaining egg whites.
