  • 2 egg yolks
  • 2 tsp vanilla
  • 1/2 cup canned pumpkin puree
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated white sugar
  • 1/2 tsp pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together the butter and sugars until smooth.
  3. Mix in egg yolks one at a time, followed by pumpkin puree and vanilla extract until combined.
  4. In another bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder, and salt. Gradually mix into wet ingredients.
  5. Scoop tablespoon-sized balls onto the baking sheet with space between them. Sprinkle the spiced sugar topping over each cookie before baking.
  6. Bake for about 12 minutes until edges are golden and centers remain soft. Cool on racks.
