  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel tomatoes
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (uncooked)
  • 2 cups shredded cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and diced onion; cook until the beef is browned and onions are translucent (about 8–10 minutes). Drain excess grease.
  2. Stir in minced garlic and taco seasoning; cook for an additional 30 seconds to release flavors.
  3. Pour in beef broth, Rotel, and tomato paste; stir to combine and bring to a boil.
  4. Add dry rice, return to a boil, then cover and reduce heat. Cook on low for 15 minutes.
  5. Uncover and sprinkle cheese on top; cover and cook for an additional 5 minutes until melted.
