  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons vegetable oil
  • 1 medium onion
  • 3 garlic cloves
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 Scotch bonnet pepper
  • 1½ cups long-grain white rice
  • 1½ cups chicken broth
  • 1 cup coconut milk

Instructions

  1. Season chicken with salt, black pepper, paprika, allspice, garlic powder, and onion powder.
  2. In a large skillet or Dutch oven, heat vegetable oil over medium-high heat. Brown the chicken on both sides (5-7 minutes each), then set aside.
  3. In the same skillet, sauté chopped onion, minced garlic, diced peppers until softened (about 5 minutes). Add chopped tomato and Scotch bonnet pepper.
  4. Stir in the rice until well coated with spices, then add chicken broth and coconut milk. Return browned chicken to the skillet.
  5. Bring to a simmer; cover and reduce heat to low. Cook for 25-30 minutes or until rice is tender and liquid is absorbed.
  6. If using frozen peas, stir them in during the last few minutes of cooking. Adjust seasoning as needed.
  7. Garnish with sliced green onions and fresh cilantro before serving.
