  • 1/4 cup vegan butter
  • 1/2 cup all-purpose flour
  • 3 cups vegetable broth
  • 4 cups rice milk (plain, unsweetened)
  • 3 heaping cups broccoli (finely chopped)
  • 1 1/2 heaping cups julienned carrots
  • 1 cup vegan cheddar cheese
  • Salt & pepper to taste

Instructions

  1. Melt vegan butter in a large pot over medium heat.
  2. Add chopped onions and garlic; sauté for about 5-7 minutes until soft.
  3. Stir in flour to create a roux.
  4. Gradually whisk in vegetable broth and rice milk until smooth.
  5. Bring to a boil, then add broccoli and carrots; cook for about 10 minutes until tender.
  6. Mix in vegan cheddar cheese until melted.
  7. Blend a portion of the soup for creaminess, then return it to the pot.
  8. Season with salt and pepper before serving hot.
