  • 1/2 pound ground breakfast sausage
  • 6 large eggs (beaten)
  • 8 slices Colby-Jack cheese
  • 8 slices sourdough bread
  • 4 tablespoons soft butter (divided)

Instructions

  1. In a non-stick skillet, cook the ground breakfast sausage until browned. Transfer to a bowl and set aside.
  2. In the same skillet, melt 2 tablespoons of butter over medium-high heat. Add beaten eggs and scramble until fully cooked but still moist. Remove from heat.
  3. Combine the scrambled eggs with the cooked sausage in the bowl.
  4. Butter one side of each slice of sourdough bread. Place one slice in the skillet, butter-side down.
  5. Layer with Colby-Jack cheese, then add about 1/2 cup of the egg-sausage mixture, followed by another slice of cheese and a second piece of bread, butter-side up.
  6. Grill until golden brown on both sides, about 3-4 minutes per side.
  7. Serve immediately while hot.
