  • 1 lb chicken breasts or thighs
  • 1 tablespoon light soy sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • 2 tablespoons light soy sauce
  • 2 tablespoons Shaoxing wine or dry sherry
  • 2 teaspoons dark soy sauce
  • 1 tablespoon cornstarch
  • 1 1/2 tablespoons sugar
  • 2 teaspoons coarsely ground black pepper
  • 1/8 teaspoon salt
  • 2 tablespoons peanut oil or vegetable oil
  • 1 tablespoon minced ginger
  • 2 cloves garlic, minced
  • 1/2 white onion, chopped
  • 2 bell peppers, chopped

Instructions

  1. Marinate chicken in a medium bowl with light soy sauce, Shaoxing wine, and cornstarch for 10-15 minutes.
  2. In a small bowl, mix all sauce ingredients and set aside.
  3. Heat oil in a large skillet over medium-high heat. Sear marinated chicken until lightly browned on both sides; transfer to a plate.
  4. In the same skillet, stir-fry ginger and garlic until fragrant. Add onions and bell peppers; cook for about 20 seconds.
  5. Pour in the prepared sauce, stirring until thickened. Return the chicken to the skillet, ensuring it's evenly coated.
  6. Serve hot with rice or noodles.
