  • 1/2 cup brown sugar, packed (light or dark)
  • 1/4 cup granulated sugar
  • 1 cup creamy peanut butter, like Jif or Skippy
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp. vanilla extract
  • 1 Tbsp. milk (optional)
  • 1 (10 oz.) bag peanut butter chips (I use Reese's brand) ~2 cups
  • 1/4 cup granulated sugar (for rolling)
  • Flaky sea salt (optional)

Instructions

  1. Preheat your oven to 375°F and line two cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer, cream cold butter, brown sugar, granulated sugar, and creamy peanut butter until smooth.
  4. Add the egg, egg yolk, vanilla extract, and optional milk; mix until combined.
  5. Gradually incorporate dry ingredients on low speed until just combined.
  6. Fold in peanut butter chips evenly into the dough.
  7. Scoop dough balls (2-3 tablespoons each), roll in granulated sugar, and place on prepared sheets.
  8. Bake for 9-11 minutes until golden but soft in the center; let cool slightly before transferring to a wire rack.
