  • 2.5 kg (5 lb) standing rib roast, bone-in
  • 150g (10 tbsp) unsalted butter, softened
  • 5 garlic cloves, minced
  • Fresh rosemary and thyme
  • 1 onion, unpeeled, quartered
  • 1 head of garlic, unpeeled, halved horizontally
  • 5 sprigs thyme
  • 3 sprigs rosemary
  • 2 tsp finely chopped fresh rosemary (or 1 tsp dried)
  • 2 tsp finely chopped fresh thyme (or 1 tsp dried)
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 1/2 cups low-sodium beef broth/stock
  • 2 1/2 cups dry red wine
  • 1 tbsp cornflour/cornstarch (optional)

Instructions

  1. Bring the standing rib roast to room temperature for about an hour.
  2. Preheat the oven to 325°F (163°C).
  3. In a mixing bowl, blend softened butter with minced garlic, rosemary, thyme, salt, and pepper.
  4. Rub the herb butter generously over the roast.
  5. Place quartered onions and halved garlic in a roasting pan; lay the roast on top.
  6. Insert a meat thermometer into the thickest part of the roast and roast until it reaches desired doneness (approximately 2 hours for medium rare).
  7. Allow to rest for at least 20 minutes before slicing.
