  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)
  • 1 Tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)

Instructions

  1. Preheat oven to 400°F.
  2. Peel and chop sweet potatoes into 1/2" chunks and onion into 1-inch pieces. Toss with olive oil, 1/4 teaspoon salt, garlic powder, and chipotle powder on a lined baking sheet.
  3. Bake for 20 minutes. Afterward, add broccoli tossed in olive oil to the pan and place chicken brushed with BBQ sauce alongside.
  4. Bake for an additional 15-20 minutes until the chicken is cooked through (165°F internal temperature).
  5. Shred the chicken in the pan and toss with remaining BBQ sauce before serving.
