Ingredients

  • 2 large baking potatoes
  • 200g block of feta cheese
  • 1 head of garlic
  • 1 lemon
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chilli flakes
  • 1 tbsp honey
  • 1/4 cup fresh basil

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the baking potatoes. Par-boil in salted water for 6–8 minutes until just tender. Drain and let steam dry.
  3. Toss the par-boiled potatoes in a baking dish with olive oil, thyme, oregano, salt, and pepper.
  4. Roast for 30–40 minutes until golden brown and crispy.
  5. Add the block of feta and quartered lemon to the center of the dish and roast for an additional 15 minutes.
  6. Squeeze roasted garlic cloves into the potatoes, stir in fresh basil, drizzle with honey, and serve immediately.
