  • ¼ cup coconut aminos (or soy sauce)
  • 1 tbsp toasted sesame oil
  • 2 cloves garlic (minced)
  • 1 medium red bell pepper (finely diced)
  • Boston Bibb lettuce leaves
  • 2 tsp rice vinegar
  • ¼½ tsp red pepper flakes (optional)
  • 2 tsp arrowroot powder (or cornstarch)
  • 1 tbsp olive oil
  • ½ c shredded carrots
  • 4 whole green onions (sliced into 1” pieces)
  • kosher salt (to taste)
  • ground pepper (to taste)
  • sesame seeds (to taste, for garnish)
  • Steamed white rice or sautéed cauliflower rice (optional, for serving)

Instructions

  1. In a measuring cup, whisk together maple syrup, coconut aminos, sesame oil, and arrowroot powder until smooth.
  2. Heat olive oil in a skillet over medium-high heat. Add ground beef and cook for about 5 minutes until browned.
  3. Stir in minced garlic and ginger; cook for an additional 2 minutes until fragrant.
  4. Add diced bell pepper and shredded carrots to the skillet; cook until tender-crisp.
  5. Pour sauce over the mixture, stirring well to combine. Simmer for 2-3 minutes until thickened.
  6. Spoon the filling into lettuce leaves and garnish with sesame seeds if desired.
