  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (56 grams) (melted)
  • 24 ounces full-fat cream cheese (680 grams) (room temperature)
  • 3/4 cup granulated sugar (150 grams)
  • 1/4 cup brown sugar (50 grams)
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (120 ml) (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat your oven to 350F (180C).
  2. Wrap a 9-inch springform pan in tin foil and grease it lightly.
  3. In a bowl, mix graham cracker crumbs, brown sugar, cinnamon, and melted butter to form the crust; press into the bottom of the pan.
  4. Prepare the apple filling by peeling and slicing apples; toss with brown sugar and cinnamon.
  5. For the cheesecake filling, beat cream cheese with sugars until smooth; add eggs one at a time, along with vanilla extract, sour cream, and cornstarch.
  6. Layer spiced apples over the cheesecake batter, then sprinkle with crumble topping made from flour, oats, brown sugar, cinnamon, and melted butter.
  7. Bake in a water bath for 60-70 minutes until set; let cool gradually before chilling overnight.
